Certified Food Protection Manager Requirements

Due to the increased number of enforcement actions taken from the lack of having an accredited food protection manager [Idaho Food Code (Section 2-102.12)], Eastern Idaho Public Health is now mandating that this requirement be met (via proof of certificate of completion from a nationally accredited food safety examination) prior to conducting a pre-opening inspection of a food establishment.

The person who completes the exam does NOT need to be present at the establishment during all hours of food service and preparation.

The accredited food protection manager must meet the following criteria:

  1. Have supervisory authority to direct and control food preparation activites.
  2. Have supervisory authority to correct food safety violations.
